Ingredients:
-1.5 pounds of boneless, skinless chicken thighs
-1 ½ cups of flour
-2 large eggs
-½ cup of mayonnaise
-½ cup of Greek yogurt
-1 tablespoon of dijon mustard
-2 tablespoons of fresh lemon juice
-2 tablespoons of parsley (dried or fresh)
-1 tablespoon of salt
-1 teaspoon of pepper
Instructions:
1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
2. Cut chicken thighs into 1 ½ inch chunks and place in a bowl with flour, salt, and pepper. Toss to coat the chicken thighs in the flour mixture and set aside.
3. In another bowl, whisk together the eggs, mayo, Greek yogurt, Dijon mustard, lemon juice, and parsley until smooth.
4. Dip each piece of chicken into the egg mixture and then place on the baking sheet lined with parchment paper. Repeat until you’ve coated all pieces of chicken with the egg mixture.
5. Bake for 30 minutes at 400 degrees Fahrenheit until golden brown and crispy! Serve warm!
