~~Ingredients:~~


-1/2 cup all-purpose flour


-1 teaspoon salt


-1/2 teaspoon pepper


-1/8 teaspoon cayenne pepper, or more to taste


-4 skinless, boneless chicken breast halves - cut into 1 inch cubes


-2 tablespoons vegetable oil, or as needed

In a large resealable plastic bag, mix the flour, salt, pepper and cayenne. Place the cubed chicken in the bag a few pieces at a time, and shake to coat. Heat the oil in a large skillet over medium heat. Place coated chicken in the hot oil, and brown on all sides. Reduce heat to low, cover skillet, and simmer for 15 minutes. Check chicken for doneness using a meat thermometer inserted into the chicken - it should read at least 165 degrees F (74 degrees 








-Make sure chicken is dry


-Marinate chicken pieces in yogurt and spices for at least 4 hours or overnight. This tenderizes the meat.


-Make sure to use a neutral oil like canola oil—if you use an oil that has a strong flavor, it will overpower the other flavors of the spices.


-If you have time, let the fried chicken rest before serving. This lets it cook evenly.


-If you don't have time, that's OK—you can eat it straight out of the fryer!
